Sugar, high-carbohydrate pasta, bread, and potatoes guarantee that fat is not broken down but rather stored. As a result, we're becoming overweight.

Keto Cannoli Stuffed Crepes

For any special occasion, breakfast, or brunch, these Keto Cannoli Stuffed Crepes are ideal! Although they are low-carb, gluten-free, grain-free, Atkins-friendly, and nut free, they taste like you're cheating!
Ingredients
8 eggs
1/2 teaspoon ground cinnamon
1 tablespoon granulated erythritol sweetener
8 ounces of cream cheese, softened
2 tablespoons butter for the pan
For the cannoli filling:
1/2 teaspoon lemon zest
1/2 teaspoon ground cinnamon
6 ounces mascarpone cheese, softened
1 cup whole milk ricotta cheese
1/4 teaspoon unsweetened vanilla extract
1/4 cup powdered erythritol sweetener
For the optional chocolate drizzle
3 squares of chocolate bar
Instructions
Steps for making crepes:
Blend each of the ingredients for the crepes in a blender until they are completely smooth.
Stir the batter to remove any remaining air bubbles after letting it sit for 5 minutes.
In a nonstick sauté pan that is 10 inches or bigger, melt 1 teaspoon of butter over medium heat.
Pour in roughly 1/4 cup of batter when the butter is melted and bubbling. If required, gently tilt the pan in a circular motion to form a crepe that is roughly 6 inches in diameter.
Cook for two minutes or until bubbles have developed almost to the center of the crepe and the top is no longer shiny.
Flip carefully, then cook for a further 30 seconds. Take out and put on a plate.
Continue until you've made 8 passable crepes.
Steps For cannoli filling:
A medium bowl should contain all of the filling ingredients. Gently fold everything together with a silicone spatula until incorporated.
The filling should be placed in a pastry bag with a big star tube. You may alternatively use a spoon to distribute it on the crepe if you don't have a pastry bag.
One crepe should have a line of filling along the middle of it.
To form a roll, fold the right side over the filling first, followed by the left side.
Continue by making the remaining 7 crepes.
Serve right away.
Steps for the optional chocolate drizzle:
The chocolate squares should be placed in a small bowl just before the crepes are served.
Heat for 30 seconds on high, uncovered in the microwave. Stir. Microwave for a further 10 seconds if not melted. Stir.
Cut a tiny piece from the bottom corner of a small plastic bag and scrape the melted chocolate into it.
To drizzle the chocolate over the crepes, gently squeeze the bag.
