FOOD FIT FOR A KING!

Doorstep coronation chicken sandwiches

SERVES 6

We’ve used a large loaf to create these satisfyingly large sandwiches, great for making something simple fit for a party.

YOU WILL NEED

4 skinless chicken breast fillets
1tsp peppercorns
500ml chicken stock
800g white bloomer, cut into 4 thick slices, lengthways
Butter for spreading
50g Bombay mix
Small bunch of coriander, roughly chopped

For the sauce:

150g mayonnaise
150g yogurt
3tsp curry powder
3tbsp mango chutney
80g sultanas, roughly chopped
Squeeze of lemon juice

HOW TO DO IT

1 Put the chicken breasts and peppercorns in a medium-sized pan, cover with the stock (top up with water to cover, if needs be). Bring to the boil then reduce to a simmer for 15-20 mins until cooked through. Remove the chicken from the stock, leave to cool, then shred into chunks.

Meanwhile, combine all the sauce ingredients together in a bowl, seasoning with salt and pepper. When the chicken has cooled, mix with the sauce. You can do this up to
