nut-free apricot bliss balls

We Love hidden veg! Send the kids to school with these healthier bliss balls packed with dates, carrot, oats and dried apricots.

makes 25 I prep 25 mins (+15 mins soaking) Q E

200g dried apricots, coarsely chopped
2 tbs white chia seeds
125ml (½
cup) fresh orange juice
10 medjool dates, pitted
75g (3/4 cup) traditional rolled oats 70g (1/2 cup) coarsely grated carrot 2 tbs moist coconut flakes, plus
20g (11/3 cups) extra, to coat Pinch of ground cinnamon

1 Combine the apricot, chia and orange juice in a shallow dish. Set aside, stirring occasionally, for 15 minutes to soak.

2 Transfer apricot mixture to a food processor. Add dates, oats, carrot, coconut and cinnamon. Process until finely chopped.

Place extra coconut on a plate. Roll tablespoonfuls of apricot mixture into balls. Roll in coconut. Place in the fridge until serving.
