ZUCCHINI AND SWEET POTATO IMPOSSIBLE PIE
SERVES 6 PREP AND COOK: 1 HOUR, 5 MINS
1 medium sweet potato (350g), cut into 2cm pieces
1 medium zucchini, halved lengthways, thinly sliced
1 red onion, chopped
½ cup plain flour
200g packet feta, crumbled
4 eggs
1½ cups milk
50g butter, melted
Halved cherry tomatoes, to serve
1 Lightly grease a rectangular ovenproof dish (8-cup capacity).
2 Boil, steam or microwave the sweet potato until tender. Drain and set aside.
3 Heat a lightly oiled, large frying pan over a medium to high heat. Add zucchini and onion. Cook, stirring occasionally, for about 5 minutes, or until zucchini is golden. Remove from heat.
4 Place flour in a large bowl. Add sweet potato, zucchini mixture and half the feta.
Whisk eggs, milk and butter in a jug. Season with pepper.
