CAJUN TUNA PIE

SERVES 6 PREP AND COOK: 45 MINS

Cooking oil spray
6 x 20cm round soft and flexible flour tortillas
425g can tuna in oil, drained
4 green spring onions, thinly sliced 310g can corn kernels, drained
1 cup grated Tasty cheese
⅓ cup fresh coriander leaves
½ x 200g punnet grape tomatoes, quartered lengthways

FILLING

6 eggs
250g tub sour cream
2 tsps Cajun seasoning

1 Spray a 19cm x 30cm lamington pan with oil.

2 Warm tortillas according to packet directions. Line pan with tortillas, overlapping and extending above the pan edges.

3 Flake tuna over the base. Sprinkle over combined onions, corn and half the cheese.

To make filling, whisk all the ingredients in a large jug until combined. Pour into pan. Sprinkle remaining cheese over
