SAVOURY FRENCH TOAST
SERVES 2 PREPARATION: 10 MIN COOKING: 15 MIN
250g bacon rashers
30ml (2T) honey, plus extra for serving
FRENCH TOAST
3 large free-range eggs
180ml (¾c) full-cream milk
30ml (2T) brown sugar
5ml (1t) ground mixed spice
5ml (1t) ground cinnamon
2,5ml (½t) flaked sea salt
2 thick slices brioche bread
2 slices white bread
45ml (3T) canola oil
Preheat the oven to 200°C and lightly grease a baking sheet with oil.
1 Place the bacon on the sheet and brush the rashers with honey. Bake for 15 minutes until crispy.
2 French toast While the bacon is in the oven, whisk the eggs, milk, sugar, spices and salt in a mixing bowl then pour into a shallow dish. Soak both sides of the bread slices in the egg mix.
3 In a nonstick frying pan, heat the oil and swirl it around until it covers the pan. Reduce the heat to low and fry 2 soaked bread slices at a time for 2 minutes on each side until golden. Keep the heat low so they don’t burn.
