    Roast

    Herb-Roasted Chicken

    Serves: 4

    Preparation Time: 15 minutes

    Total Time: 1 hour 30 minutes

    Ingredients:

    1 whole chicken (about 4 pounds), giblets removed

    2 tablespoons olive oil

    1 tablespoon dried thyme

    1 tablespoon dried rosemary

    1 tablespoon dried oregano

    Salt and pepper to taste

    1 lemon, halved

    4 garlic cloves, minced

    Instructions:

    Preheat the oven to 375°F (190°C).

    After rinsing, dry the chicken with paper towels.

    Combine the olive oil, dried thyme, dried rosemary, dried oregano, salt, and pepper in a small bowl.

    Cover the chicken with the herb mixture, even underneath the skin.

    Insert the lemon halves and minced garlic into the cavity of the chicken.

    Position the chicken breast-side up in a roasting pan.

    Roast in the preheated oven for approximately one hour and fifteen minutes, or until the internal temperature of the thickest section of the thigh reaches 165°F (74°C).

    After taking the chicken out of the oven, give it a 10-minute rest before carving.

    Carve the chicken, then serve it along with your preferred side dishes.

    Herb-Crusted Pork Tenderloin

    Serves: 4

    Preparation Time: 10 minutes

    Total Time: 35 minutes

    Ingredients:

    1 pound pork tenderloin

    2 tablespoons Dijon mustard

    2 teaspoons dried thyme

    2 teaspoons dried rosemary

    Salt and pepper to taste

    1 tablespoon olive oil

    Instructions:

    Set the oven's temperature to 400°F (200°C).

    Using paper towels, dry the pork tenderloin.

    Combine the Dijon mustard, dried thyme, dry rosemary, salt, and pepper in a small bowl.

    Cover the pork tenderloin with an equal layer of the mustard mixture.

    In a skillet that is oven-safe, heat the olive oil over medium-high heat.

    Place the pork tenderloin in the skillet and brown for about 2 minutes on each side.

    Place the skillet in the hot oven, and roast for 20 to 25 minutes, or until the internal temperature reaches 145 degrees Fahrenheit (63 degrees Celsius).

    After taking the pig out of the oven, let it rest for a while before slicing.

    Cut the pork tenderloin into slices and serve it with your preferred salad or veggies.
