    No Gallbladder Diet - Sussane Davis

    Roast

    Herb-Roasted Chicken

    Serves: 4

    Prep Time: 15 minutes

    Total Time: 1 hour 30 minutes

    Ingredients:

    1 whole chicken (about 4 lbs), giblets removed

    2 tbsp olive oil

    2 tsp dried thyme

    2 tsp dried rosemary

    1 tsp dried oregano

    Salt and pepper to taste

    Instructions:

    Set the oven temperature to 375°F (190°C).

    Using paper towels, pat the chicken to dry.

    To form a paste, combine olive oil, dried thyme, rosemary, oregano, salt, and pepper in a small bowl.

    Use the herb mixture to rub the chicken all over, including the skin.

    Set the chicken on a dish or roasting pan that can go in the oven.

    Roast the chicken in the preheated oven for approximately one hour and fifteen minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown.

    After resting for about 10 minutes, carve the chicken.
