    Lupus Diet - Sussane Davis

    Roast

    Lemon Herb Roasted Chicken

    Serves: 4

    Preparation Time: 15 minutes

    Total Time: 1 hour 15 minutes

    Ingredients:

    1 whole chicken (about 4 pounds)

    2 lemons, zested and juiced

    3 tablespoons olive oil

    2 cloves garlic, minced

    1 tablespoon fresh rosemary, chopped

    1 tablespoon fresh thyme, chopped

    Salt and pepper to taste

    Instructions:

    Set the oven temperature to 375°F (190°C).

    Combine the lemon zest, lemon juice, garlic, rosemary, and thyme in a bowl.

    Put the chicken in a roasting pan in step three. Rub the chicken with the lemon-herb mixture all over.

    Use salt and pepper to season the chicken.

    Roast the chicken for approximately an hour, or until it achieves an internal temperature of 165°F (74°C) and the skin is golden and crisp.

    Let the chicken rest before cutting for 10 to 15 minutes.

    Serve with the sides of your choosing.
