    ROAST

    Lemon Herb Roast Chicken

    Serves: 4

    Preparation Time: 15 minutes

    Total Time: 1 hour 30 minutes

    Ingredients:

    -  1 whole chicken (about 4 pounds)

    -  2 lemons, halved

    -  4 cloves garlic, minced

    -  2 tablespoons olive oil

    -  1 teaspoon dried thyme

    -  1 teaspoon dried rosemary

    -  Salt and pepper to taste

    Instructions:

    Preheat the oven to 375°F (190°C).

    Rinse and pat dry the chicken. Place it in a roasting pan.

    Squeeze the juice from the lemon halves over the chicken and place the lemon halves inside the cavity.

    In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper.

    Rub the garlic and herb mixture all over the chicken.

    Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).

    Let the chicken rest for about 10 minutes before carving.

    Serve with your choice of cooked vegetables or a simple salad.
