    Roast Recipe

    South Beach Herb-Roasted Chicken

    Serves: 4

    Prep Time: 15 minutes

    Total Time: 1 hour 15 minutes

    Ingredients:

    -  1 whole chicken (about 4 pounds)

    -  2 tablespoons olive oil

    -  2 teaspoons dried thyme

    -  2 teaspoons dried rosemary

    -  1 teaspoon garlic powder

    -  Salt and pepper to taste

    Instructions:

    Preheat your oven to 375°F (190°C).

    Rinse the chicken and pat it dry with paper towels.

    In a small bowl, mix together the olive oil, thyme, rosemary, garlic powder, salt, and pepper.

    Rub the herb mixture all over the chicken, both outside and inside the cavity.

    Place the chicken in a roasting pan, breast side up.

    Roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F
