    Total time: 1 hour 30 Minutes

    INGREDIENTS

    DIRECTIONS

    Preheat the oven to 375°F (190°C) and coat a roasting pan with cooking spray.

    Clean and pat dry the chicken with paper towels.

    Spread the olive oil all over the chicken to coat it evenly.

    In a small mixing bowl, combine the dry herbs, garlic powder, salt, and pepper.

    Spread the herb mixture all over the chicken, massaging it in.

    Put the bird in a roasting pan that has been oiled.

    Cook for about 1 hour and 30 Minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.

    Take the chicken from the oven and set it aside for 10 Minutes to rest before carving.

    With your choice of side dishes, serve the low-oxalate herb-roasted chicken.

    Low-Oxalate Balsamic Roasted Vegetables

    DIRECTIONS

    Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius) and line a baking sheet with parchment paper.

    Whisk together the balsamic vinegar, olive oil, minced garlic, dried herbs, salt, and pepper in a mixing bowl.

    Toss the mixed veggies in the bowl with the balsamic mixture to coat.

    Distribute the vegetables evenly on the baking sheet.

    Roast the vegetables in a warm oven for 30-35 Minutes, or until soft and slightly caramelised, stirring halfway through.

    Remove from the oven and set aside to cool slightly before serving.

    Serve the low-oxalate balsamic roasted vegetables with your favourite protein as a side dish.
