    BEEF AND EGGPLANT CASSEROLE

    2 pounds 95/5 ground beef

    2 cups cubed eggplant

    1 28-ounce can diced tomatoes, drained

    2 cups tomato sauce

    2 cups fat-free shredded mozzarella cheese

    2 teaspoons mustard

    2 teaspoons Worcestershire sauce

    1 teaspoon dried oregano

    1 teaspoon salt

    1/2 teaspoon pepper

    Sprinkle cut eggplant with salt and let sit in a colander for about 30 minutes.

    In a large bowl, combine beef, Worcestershire sauce, mustard, salt and pepper. Spread the mixture on the bottom of the slow cooker.

    Spread eggplant on top. Spread tomatoes and tomato sauce. Top with mozzarella and sprinkle with oregano.

    Cover and cook on low for 4-5 hours.

    LOW CARB PIZZA

    1 1/2 pounds 95/5 ground beef

    2 cups no-sugar-added pasta sauce

    3 cups baby spinach

    2 cups sliced mushrooms

    1/2 cup sliced bell peppers

    1/2 cup chopped onion

    16 slices low fat pepperoni

    3 cups fat-free shredded mozzarella

    Nonstick Cooking Spray

    Brown the beef. Transfer to a large bowl. Combine with onion and sauce.

    Spray the slow cooker. Spread half of the meat mixture on the bottom. Lay half of the spinach on top. Lay 1/2 of the mushrooms, bell peppers and pepperoni then top with cheese. Repeat the layers with mozzarella on top.

    Cook on low for 5-6 hours.

    EASY SWISS STEAK

    1 1/2 pounds lean top round roast

    1 28-ounce can crushed tomatoes, with juice

    1 medium onion, sliced

    1 envelop onion soup mix

    1 teaspoon dried oregano

    1/2 teaspoon salt

    1/2 teaspoon pepper

    In a small bowl mix together oregano, salt and pepper. Rub the seasoning on the roast.

    Brown the roast on all side. Transfer to slow cooker. Top with the remaining ingredients

    Cook on low for 7-8 hours.

    ORANGE BEEF

    1 1/2 pounds lean sirloin steak, cut into 1/4-inch slices

    2 1/2 cups sliced mushrooms

    1 medium onion, diced

    2 cloves garlic, minced

    1/2 cup fresh orange juice

    1/2 cup low-sodium soy sauce

    1/4 cup apple cider vinegar

    2 tablespoons stevia

    1 tablespoon grated fresh ginger

    1 tablespoon sesame oil

    Add all ingredients slow cooker.

    Cool on low for 7-8 hours or until meat is tender.

    CHINESE DAIKON BEEF STEW

    2 pounds lean top round roast, cut into 1.5-inch cubes

    1 pound Daikon Radish, halved lengthwise and cut into 1.5-inch pieces

    3 cloves garlic, minced

    2 tablespoons grated fresh ginger

    2 star anise

    1 bay leave

    2 tablespoons Oyster Sauce

    2 tablespoons cooking wine

    1 tablespoon Hoisin Sauce

    1 tablespoon low-sodium soy sauce

    salt to taste

    Spray a skillet, Brown the beef then transfer to slow cooker.

    Sauté the garlic and ginger until fragrant. Transfer to slow cooker.

    Add the remaining ingredients except Daikon and mix well.

    Cover and cook on low for 7-8 hours. Add the Daikon in the last 1 hour. Add salt to taste.

    ASIAN BRAISED BEEF

    2 pounds lean top round roast, cut into 1.5-inch cubes

    2 cloves garlic, minced

    1 green onion, thinly sliced

    1 tablespoon grated fresh ginger

    1/2 stalk lemongrass, pounded

    1/2 cup fat-free low-sodium chicken broth

    1/2 cup white rice vinegar
