    Hashimoto's Herb-Roasted Chicken

    Prep time: 10 Minutes

    Total time: 1 hour 30 Minutes

    INGREDIENTS

    DIRECTIONS

    Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).

    Rinse and pat dry the chicken with paper towels.

    In a small mixing bowl, combine the dried thyme, rosemary, oregano, garlic powder, onion powder, salt, and pepper.

    Rub the olive oil all over the chicken, including inside the cavity, and then sprinkle with the herb mixture.

    Place the chicken breast-side up on a roasting rack in a roasting pan.

    Cook for 1 hour and 30 Minutes, or until the internal temperature of the chicken reaches 165°F (74°C) when checked with a meat thermometer.

    Remove the chicken from the oven and set it aside for 10 Minutes to rest before carving.

    Serve the herb-roasted chicken with your favourite side dishes for a Hashimoto's-friendly meal.
