ONE-PAN COOKING

Sausage, butter bean and tomato tray bake with crispy röstis

Cook the sausages and sauce before the power goes out, then get everything ready to go into the oven when it comes back on. The röstis take just 10 minutes in the air-fryer, so you can cook them while the sausages are in the oven.

Woolworths pork-and-herb bangers 500 g
 garlic 4 cloves, crushed
 chillies 2, chopped
 rosemary or sage 2 sprigs
 olive oil 2 T
 cherry tomatoes 2 x 400 g cans
 butter beans 1 x 400 g can, drained and rinsed
 Woolworths frozen potato röstis 8
 Parmesan 30 g, grated

1 Fry the bangers in a pan until cooked through

2 In another pan, fry the garlic, chillies and rosemary or sage in the olive oil until fragrant.

3 Add the tomatoes and simmer for 10 minutes.

4 Transfer the tomato sauce to an ovenproof dish or leave it in the pan if it's ovenproof, then stir through the butter beans.

5 Submerge the cooked sausages in the sauce and sprinkle over the Parmesan. Roast for 10-15 minutes at 200°C, or until bubbling. Bake or air-fry the potato röstis according to package instructions. Serve the sausages with the röstis

Roast sweet potato salad

Cook the sweet potato on the skottel or in a pan over gas. If you have leftover sweet potatoes, simply reheat them before assembling the salad.

 sweet potato 1 kg, peeled and cut into chunks
 red onions 2, peeled and quartered

 orange juice ½ cup
 sea salt and freshly ground black pepper, to taste
 baby spinach 100 g
 rocket 100 g
 soft goat's cheese 250 g
 pomegranate rubies 175 g
 orange zest, to garnish
