Tagliatelle with vegetable ragu
A veg-packed sauce to please everyone.
■ Serves 5 ■ Prep 10 mins ■ Cook 40 mins VEGETARIYAN FREEZABLE sauce only
1 onion, finely chopped
2 celery sticks, finely chopped
2 carrots, finely chopped
4 garlic cloves, crushed
1 tbsp each tomato purée and balsamic vinegar
250g chopped vegetables, such as courgettes, peppers and mushrooms
50g red lentils
2 x 400g cans chopped tomatoes with basil
250g tagliatelle
2 tbsp shaved vegetarian Italian-style hard cheese (optional)
Cook the onion, celery and carrots in a large saucepan with 2-3 tbsp water, stirring often until the vegetables are soft.
