There’s no shortage of flavour in these budget-friendly veggie burgers!

YOU WILL NEED

Low-calorie cooking spray
40g rolled oats
2 x 400g tins green lentils, rinsed and drained
½ onion, chopped
40g baby spinach leaves
Handful coriander leaves
Handful parsley
Handful mint leaves
2tsp garlic granules
1tsp each ground cumin, coriander
4 x 60g wholemeal rolls, to serve
75g mixed salad, to serve (optional)

For the tzatziki:

½ cucumber150g fat-free Greek-style yogurt1-2tsp harissa paste (to taste)A few fresh mint leaves, finely chopped1tsp runny honey
