Masala omelette

An omelette makes a quick and easy, super-healthy meal. We have used Indian flavours here to spice up this veggie staple.

YOU WILL NEED
2 eggs, plus 3 whites
Handful of spinach
6 cherry tomatoes, halved
½ small green chilli
½tbsp garam masala
½tsp turmeric
½tsp cumin
1tsp olive oil
½ red onion, sliced
2 spring onions, chopped
½ bunch coriander, optional
HOW TO DO IT
Beat the eggs and whites. Season. Mix in the spinach, half the tomatoes, the chilli and spices, reserving a little chilli. Heat
