In the Scandinavian countries, we are very influenced by the season and the traditions. Each season offers different produce, from new potatoes, summer cabbage and berries starting in June, to root vegetables and cabbage in the autumn and all through the winter. Then in spring comes asparagus, ramson, radishes and much more.

But we are, more than anything, influenced by the light – the long summer nights, the warm yellow light in early autumn and the long, dark winter months where hygge is essential for people to get through.
