Smoky Sweetcorn Chowder with Cheddar Croûtes (gf)

Hearty, smoky and super quick with a glorious topping of crunchy cheesy croûtes. You could also add in cooked chicken or prawns for a more substantial meal.

PREP: 10 minutes COOK: 20 minutes SCALE: easy

2 tablespoons olive oil
1 brown onion, thinly sliced
2 cloves garlic, crushed
2 teaspoons cumin seeds
2 teaspoons dried oregano
4 cups frozen sweetcorn kernels, thawed and 1 cup set aside
2 tablespoons instant polenta
1 teaspoon smoked paprika
4 cups vegetable stock, hot
1 teaspoon chilli flakes sea salt and ground pepper
2 teaspoons lemon juice

TO SERVE

sour cream
2 tablespoons finely chopped coriander
Crispy, Cheesy Cheddar Croutons (see recipe below)

Heat the oil in a large saucepan and stir in the onion, garlic, cumin seeds and the oregano. Cover and cook gently for 5 minutes, stirring occasionally.
