    MEAL 1- Citrus Flavoured Cauliflower

    Introduction:

    Try this healthy Vitamin C rich salad along with the spicy tangy vinaigrette and you are sure to keep yourselves warm for the cold winter evenings.

    Preparation Time: 10 Minutes

    Cooking Time: 20 Minutes

    Yields: 6 Persons

    Ingredients:

    • 1 cauliflower, preferably small, cut into small florets

    • 1 pound broccoli florets

    • 1 orange, juiced and zested

    • 1 tablespoon capers

    • 1 romanesco or green cauliflower, preferably small

    • 4 anchovies

    • 2 oranges, sliced cross wise, pith and seeds discarded

    • 4 tablespoon extra-virgin olive oil

    • 1 hot pepper, sliced

    • Salt, to taste

    Procedure to make Citrus Flavoured Cauliflower

    1) To begin, combine anchovies, orange zest and juice, olive oil, hot pepper, capers, and salt in a small shaker and shake them well. Keep it aside.

    2) After that, pour 1 cup of water into the pressure cooker and then place the steamer basket in it.

    3) To this, place all the florets and then close the lid of the pressure cooker.

    4) Cook it over medium high heat and once it reaches high pressure, lower the heat and cook for 6 minutes at low pressure.

    5) When the time is up, open it up and serve it along with the sliced orange slices and drizzle the vinaigrette over it.

    Tips: It pairs well with white fish or meat fare.

    • 1 pomegranate

    • ¼ cup pine nuts, preferably roasted

    1) To begin, pour 1 cup of water into the pressure cooker and then place the steamer basket in it.

    2) After that, place the Brussels sprout into it and close the lid of the pressure cooker.

    Serves: 6 Persons

    Ingredients:

    • 1 pound lentils

    • 2 ribs of celery

    • 4 garlic cloves, finely diced

    • 1 can tomatoes, diced

    • 2 carrots

    • 4 cups chicken broth

    • Cilantro, chopped, to season

    Procedure to make Lentil Soup

    1) To start, pour the olive oil into the pressure cooker and once it is hot, add the onions to it.

    2) Cook the onions until they are transparent and softened.

    3) After that, stir in the garlic and sauté them for 2 minutes or so.

    4) Next, toss all the remaining ingredients into it and stir them well.
