    MEAL 1- Citrus Salad with Greek Yoghurt

    Introduction:

    This is a great appetizer salad because the flavours meld beautifully in this to create an enticing fruit salad. But the stars of this salad are the yoghurt ginger dressing and the honey, which merges all the ingredients perfectly.

    Preparation Time: 10 Minutes

    Cooking Time: 1 ½ hours

    Serves: 6 persons

    Ingredients:

    1 pink grapefruit, chopped into 1/3 portions

    3 navel oranges, peeled, sliced and quartered into ¼ inch rounds, seeds removed

    2 large tangerine, halved and peeled

    2/3 cup crystallized ginger, minced

    ½ cup cranberries, dried + more to serve

    1 × 16 ounce container Greek yogurt

    1/4 teaspoon cinnamon, ground

    Procedure to make Greek Salad

    1) To begin, place all the fruits into a large sized bowl. Then, stir in the cinnamon and cranberries and stir them well.

    2) Cover the bowl and keep it in the refrigerator for about 1 hour or so.

    3) After that, mix the yogurt and the ginger in another small bowl.

    4) Before serving, top the salad with the yoghurt and cranberries, if required.

    Tip: It is also possible to add brown sugar, say about ¼ cup if needed.

    MEAL 2- Black Bean and Sweet Potato Soup

    Introduction:

    This soup is totally irresistible because it has so many layers of flavours in it. The sweetness from the sweet potato blends perfectly with the earthiness from the beans to create this highly delectable soup.

    Preparation Time: 10 Minutes

    Cooking Time: 30 Minutes

    Serves: 4 to 6 persons

    Ingredients:

    2 sweet potatoes, chopped

    1 onion, finely chopped

    2× 19 ounce cans black beans

    1 garlic clove

    2 teaspoon cumin

    1 teaspoon coriander, ground

    2 cups salt-free vegetable stock

    ¼ teaspoon sea salt

    2 tablespoon extra virgin olive oil

    2 cups water

    Procedure to make Black Bean and Sweet Potato Soup

    1) To begin with, spoon some extra virgin olive oil into a heated stock pot over medium low heat.

    2) To this, stir in the onion and cook them for 5 minutes or until they becomes translucent.

    3) Now, toss the garlic and the spices into the stock pot and sauté them for 1 minutes or so.

    4) Next, stir in the sweet potato, water, and vegetable broth and then bring the mixture to a boil.

    5) Once it starts boiling, lower the heat. Stir in the beans into this and allow it to simmer for about 15 to 20 minutes, covered, or until the sweet potatoes becomes
