    Painless Brazilian Recipes For Lazy People - Phillip Pablo

    Recipe 1. Brazilian Corn Cake

    Prep time: 15 minutes

    Cooking time: 30 minutes

    Makes: 12 corn Squares

    Ingredients

    • 3 eggs

    • ½ cup flour

    • One stick unsalted butter

    • One tablespoon baking powder

    • 1 cup sugar

    • ½ cup oil

    • 2 cups yellow cornmeal

    • One pinch salt

    • 1 cup milk

    Directions

    1. Heat the stove to 395 ⁰F.

    2. Take a baking pan 9 inches by 13 inches and 2 inches in depth, now spray grease the pan and dust with flour.

    3. Dissolve the butter in a pan on a low heat and pour into a bowl.

    4. Next blend in the eggs, sugar, milk, oil, salt, flour, cornmeal and baking powder, beat together.

    5. When ready add to the flour-dusted pan and evenly spread it out.

    6. Cook in the oven for 25 minutes until golden.

    7. Take out the oven and rest for a few minutes.

    8. Slice into shapes and dish up.

    9. Accompanied with tea or coffee.

    2. Brazilian Breakfast

    Prep time: 10 minutes

    Cooking time: 5 minutes

    Serves: 1 person

    Ingredients

    • One papaya, prepared and sliced

    • Two slices ham

    • 1/3rd French baguette

    • Two slices cheese

    • 1 cup of strong coffee, or milky coffee

    • Your choice of jam

    • Fresh fruit juice

    • Toast

    • Cuscus with coconut milk

    • Pao de queijo, crispy cheese puffs

    Directions

    1. Arrange all the ingredients on a platter or board along with the drinks.

    2. Dig in and enjoy.

    3. Brazilian Acai Bowl

    Cooking time: 5 minutes

    Serves: 1 person

    Ingredients

    • 2 bananas

    • ¼ cup granola

    • 7 ounces frozen acai purée, slightly thawed, can be found in smoothie section of health stores

    • ¼ cup frozen passion fruit purée or ¼ cup of orange juice

    • One tablespoon sugar

    Directions

    1. Place both the purée’s in a blender, add the sugar in along with one banana, and pulse.

    2. Once it becomes like sorbet, correct the taste.
