    1. African Chakchouka Breakfast with Warm Pita

    Ingredients:

    • Three cloves of garlic

    • Two tablespoons Paprika

    • Three tablespoons Olive oil

    • Pepper and salt (to taste)

    • Three pieces each of Green and red bell peppers

    • Four medium eggs

    • 1 cup water

    • 3 tomatoes

    • 1 Onion

    Directions:

    1. In a deep skillet, cook the paprika with olive oil for about 15 seconds.

    2. Sauté the garlic and onions for about 5 minutes then add the tomatoes.

    3. Cook the vegetables for about 4 minutes before reducing heat to low.

    4. Add the water, pepper, salt and bell peppers. Simmer for 10 minutes.

    5. In a small bowl, crack four pieces of eggs and pour one egg at a time on the pepper.

    6. Simmer for 10 minutes until the eggs are fully cooked.

    7. Serve your Chakchouka with warm pita and enjoy.

    2. Fufu Banana Bread with Cinnamon and Almonds

    Ingredients:

    • 4 bananas

    • 2 cups sugar

    • One tablespoon baking soda

    • ½ teaspoon salt

    • ½ cup of almonds

    • 1 cup milk

    • ½ cup vegetable oil

    • Three teaspoons cinnamon

    • Four medium eggs

    • 4 cups of flour
