CURRY IN A HURRY

Serves 8 (or 4 and 4 for the freezer)

Preparation time 10 minutes

Cooking time 25 minutes

INGREDIENTS

• 1 tbsp olive oil
• 1 red onion, peeled, halved and finely sliced
• 2 cloves garlic, crushed
• 1 courgette, cut into 2cm/¾in pieces
• 1 red pepper, deseeded and sliced
• 400g/14oz skinless chicken breast or tofu
• 2 tbsp korma curry paste (check label for allergens)
• 1 small bunch of fresh coriander, leaves picked and stalks finely chopped
• 1 x 400g tin chopped tomatoes
• 1 x 400g tin coconut milk
• A handful of spinach leaves
• Sea salt and freshly ground pepper

To serve

• Cooked• Mango chutney
