And most, but not all, the recipes serve four. All the recipes specify the calorie value per serving. All the recipes are between 250 and 550 Calories - and all are delicious. As mentioned, most often the recipes in this eBook only cover the evening meal. To lose weight you should monitor what you eat the remainder of the day. In this regard, we recommend the 90-Day Vegetarian Diet. The eBook is published by NoPaperPress and has 90 Daily Meal Plans with low-calorie vegetarian recipes.
Note that the recipes in this eBook are a popular vegetarian variant called Pesceterian, because the diet includes seafood, eggs and dairy products. Of course Pesceterians do not eat meat or poultry. The inclusion of seafood and eggs assures that your intake of protein will be more than adequate. People often adopt a Pescetarian diet for health reasons, or as a stepping stone to a fully vegetarian diet.
Recipe
1
Wild Rice & Quinoa Mix with Veggies
¼ cup wild rice, dry
½ cup quinoa, dry
1 bunch Kale (about 1 lb)
2 medium sweet potatoes, cut in
8 medium button mushrooms
2 tablespoons olive oil, divided
1. Cook wild rice and quinoa according to package directions.
2. Clean and quarter mushrooms. Over medium heat sauté mushrooms in olive oil until they turn reddish brown with golden spots, about 10 minutes.
3. Cut sweet potatoes into bite-size pieces. Place in baking pan and coat potatoes lightly with olive oil. Roast in oven set at 375ºF for about 25 minutes, or until done.
4. Wash kale and remove kale stems. Chop and then steam until tender.
5. Plate and serve hot.
Serves 4. About 270 Calories per serving
Note: Add a small whole-grain roll which brings the total for the meal to 350
