Before I can remember, I've always had migraines and got sick often. I was diagnosed with Hasimoto's hypothyroidism when I was only eight years old. Since then, it's been a battle to stay healthy. As an adult, I learned that I had even more medical conditions, including arthritis, blood clotting disorders, anemia, vit d deficiency, chiari malformation, MTHFR, asthma, and reactivated epstein-barr. But I have big dreams, and this is only the beginning. In 2012, my doctor suggested that I give up gluten to help bring down my tyroid antibodies. I would never go back. This has changed my life and the way I feel on a daily basis. Through out my medical journey, I learned that it's important to take charge of your health, be mindful of everything your body tells you and the things you eat, and listen to what the doctor tells you. But that is what I am here for...to help you. I want to help you find the right foods, the right information, and the right plans for what is going on in your life. I want to help you be the best, healthiest version of yourself. Now, you may be wondering about my skills as a writer. Well, I have always loved writing. Within the last couple years, I decided to take my passion and make it into a full-fledged business. That's exactly what I did at the end of 2018, but I've been writing and editing for about 10 years now. In fact, I am actually a young adult fantasy author.     Creamy Zucchini Soup

    Serves: 4 ~ Preparation Time: 5 minutes ~ Cooking Time: 10 minutes

    This is a super easy, quick and satisfying gluten-free soup. You can enjoy it hot or chilled, according to your mood and the weather.

    Ingredients:

    • Zucchini 1 ½ pounds, cut into 1-inch pieces

    • Homemade vegetable broth 3 cups

    • Fresh dill 1 tablespoon, chopped, or 1 teaspoon dried

    • Reduced fat cheddar cheese ¾ cup, shredded

    • Freshly ground black pepper ¼ teaspoon

    • Salt ¼ teaspoon

    Directions:

    1. Combine zucchini, broth, and dill in a saucepan and bring it to a boil over medium-high heat.

    2. Reduce heat to low and simmer uncovered for 10 minutes or until zucchini is tender.

    3. Remove from the heat and puree with an immersion blender until smooth.

    4. Return the soup pan to heat over medium-high heat and slowly stir in cheese until it is incorporated.

    5. Season with salt and pepper and serve.

    6. You can serve it hot or chilled as you like.

    Chicken Tortilla Soup

    Serves: 6 ~ Preparation Time: 10 minutes ~ Cooking Time: 20 minutes

    This version of chicken tortilla soup is super easy, healthy, and delicious. You can also use homemade chicken broth.

    Ingredients:

    • Chicken thighs 1 pound, boneless, skinless, trimmed and cut into 1-inch pieces

    • Reduced sodium homemade chicken broth 4 cups

    • Corn tortillas 8 halved, and thinly sliced

    • Diced tomatoes with green Chiles 1 can (14 ounces)

    • Sharp cheddar cheese shredded ½ cup

    • Fresh cilantro chopped ¼ cup

    • Lime juice 2 tablespoons

    • Canola oil 1 tablespoon

    • Poblano peppers 3 diced

    • Onion 1 medium sized, diced

    • Ground cumin 1 teaspoon

    • Olive oil cooking spray

    Directions:

    1. Preheat your oven to 400 degrees F.
