Turkey spaghetti bolognese

SERVES 4 “This is a lighter and healthier version than beef mince bolognese. Turkey is loaded with B vitamins, phosphorus, potassium, iron, selenium and zinc,” explains Anita Bean, sports nutritionist, champion athlete and author of The Runner’s Cookbook (Bloomsbury). “Turkey also contains beta-alanine, which can reduce fatigue and improve performance during high-intensity exercise.”

INGREDIENTS

• 250g wholewheat spaghetti
• 1 tbsp olive oil
• 1 onion, chopped
• 500g turkey mince
• 2 celery sticks, chopped
• 2 garlic cloves, crushed
• 2 carrots, peeled and diced
• 2 × 400g tins chopped tomatoes
• 2 tbsp tomato purée
• 1 tsp dried oregano (or 2 tbsp fresh oregano)
• 1 bay leaf
• Dash of Worcestershire sauce
• Salt and black pepper to season
• 2 tbsp grated Parmesan cheese

Serve with green vegetables, such as spring greens or broccoli, or a green salad

METHOD

1 Heat the oil in a large non-stick pan over a medium heat.

2 Add the onion and cook for 3-4 minutes until translucent.

3 Add the turkey mince and cook, stirring, for 4–5 mins.
