I had the stuffed portfolios and they were wonderful, and I find you can change up these recipes by changing cheese. the book does have vegan fare, and you can kind of torque it by skipping cheese if you don't like it . I know that ATK are exact but this is a vegetarian, vegan and flexitarian book. I suggest this book for all.
