    INGREDIENTS

    4 diced breasts of chicken

    1 Cup chopped onion.

    1 cup of water

    1/4 Cup of Butter

    2 Tbsp avocado oil

    2 Tbsp berbere spice

    1 Tbsp minced garlic

    1 Tbsp fresh minced ginger

    1 black cardamom pod

    DIRECTIONS

    Heat the chopped onion in a microwave-safe bowl covered for 2 minutes. Stir frequently until it becomes soft.The onion should be softened in between 8 and 10 minutes.

    Combine the water, avocado oil, and onions in a blender or on the spot. Blend untilSmooth.

    Heat the butter in a large saucepan on medium heat.Add ginger, garlic, and black cardamom seed.Stir frequently for between 2 to 3 minutes.

    You should add the berbere spice.You can buy it or make it at home. There are many recipes online.For about 30 seconds, you can prepare spices.

    Add half the onion puree to the mixture once it starts bubbling.

    Add the chopped chicken to the saucepan with the onion puree.

    Simmer for a few minutes, then cover the pot and reduce the heat to medium.Let it simmer for a while, then cover and reduce heat to medium.

    ETHIOPIAN SPICY DORO WAT SOUP

    Cook time: 40 min.

    INGREDIENTS

    1/4 cup coconut oil or lard

    1 (4 Ounces) finely chopped yellow onions

    1 minced garlic

    1 tbsp berbere seasoning

    2 tsp fine sea salt

    2 1/2 lb. chicken breasts, cut in 3/4" (2 cm) chunks.

    4 cups chicken broth

    8 hardboiled eggs

    INSTRUCTIONS

    After adding the oil to an Instant Pot 6-quart, press Sauté.After the butter has melted, add the onion, garlic, and salt.Cook the onion for 10 minutes or until it begins to caramelize.To end the Sauté, press Cancel.

    Add the broth and chicken to the instant pot.After 20 minutes, set the timer and cover.Switch the valve to the venting position when you are done.

    Half the hard-boiled eggs.Before adding the chicken and onion mixture, place two eggs halves in each bowl.

    ETHIOPIAN BEEF STEW

    Prep Time: 10 minutes

    Cooking Time: 20 minutes.

    Total Time: 30 minutes

    INGREDIENTS

    2 tbsp Ghee

    1 chopped and peeled Onion

    2 cloves Garlic

    2 tbsp Berbere

    1 tsp Kosher Salt

    1 pound Ground Beef

    1/2 cup of Water

    1/2 Cup of Diced Tomatoes

    INSTRUCTIONS

    INSTANT POOT: Place the garlic and onion in a food processor bowl. Pulse until coarsely chopped.

    Pour the ghee in your Instant Pot while it is on Sauté.Salt, garlic/onion combination, and berbere are all you need to finish it off.

    Cook the mixture until it is almost dry.This step is crucial.We should have made spiced ghee today (niter-kibbeh) instead of being lazy. However, we did not. I still consider it efficient.This step
