    Ingredients

    One large cauliflower head, chopped into florets

    One small onion, chopped Two cloves garlic, minced

    4 cups vegetable or chicken broth (low- sodium)

    1/2 cup heavy cream / unsweetened

    almond milk

    Two tablespoons olive oil

    Add salt and black pepper for taste. Fresh chives for garnish

    Preparation

    Pour the olive oil painting into the big pot and heat it up to medium.

    Add the chopped garlic and onions, and cook till they become transparent and soft.

    Then, add the veggie or chicken soup to the pan with the cauliflower..

    Once the mixture reaches a boiling point, lower the heat and allow the cauliflower to simmer until it becomes soft ( about 15- 20 minutes).

    Use an absorption blender to puree the soup until smooth. You can also transfer it to a blender, but be careful as it’ll be hot.

    Add the almond butter or whipping cream and sprinkle with peppers and a swab.

    Garnish with fresh chives before serving.

    LOW-CARB SPINACH AND ARTICHOKE SOUP

    Ingredients

    three to four cups vegetable or chicken stock

    1 cup fresh spinach leaves

    ––––––––

    cup artichoke hearts, drained and diced

    cup heavy cream or thin almond milk

    glass with grated Parmesan cheese 2 cloves garlic, diced

    soupspoons olive oil

    Preparation

    The olive oil should be heated on average in a big pot. Additionally, add the chopped garlic and cook it until fragrant.

    Pour in the chicken/vegetable broth and then bring it to a simmer.

    Add the fresh spinach and chopped artichoke hearts to the pot. Let them cook until the spinach wilts and the artichokes soften.

    Grated Parmesan cheese and whipping cream or almond milk should be added and stirred. For currently producing, season with salt and pepper.

    Once heated completely, simmer for a few more minutes and serve.
