    APPITIZERS & MAINS

    Buttered Cabbage

    Yield: 4 to 6 servings

    Ingredients:

    1 pound Savoy cabbage (or another dark green, leafy cabbage)

    2 tablespoons butter

    2 tablespoons water

    Salt and freshly ground black pepper

    Directions:

    Remove the tough outer leaves from the cabbage. Cut the head of cabbage into four, from top to bottom. Cut out the core, then slice the cabbage crossways into fine shreds, about ¼ inch thick.

    Combine the butter and water in a wide saucepan over medium heat and allow the butter to melt.

    Toss in the cabbage and season with salt and pepper. Cover with a lid and cook for 2 to 3 minutes, until just softened; do not let the cabbage burn. Taste immediately for seasoning and serve.

    Cabbage with Bacon and Cream

    Yield: 6 to 8 servings

    Ingredients:

    4 tablespoons butter

    6 slices (rashers) of smoked regular (streaky) bacon, thinly sliced

    1 large Savoy or green cabbage (about 1⅓ pounds), outer leaves removed

    2 cloves garlic, crushed

    1 tablespoon water

    ¾ cup light or heavy (single or double) cream

    Salt and freshly ground black pepper

    Directions:

    Melt the butter in a large frying pan or wok over high heat, add the bacon, and fry for 4 to 5 minutes,
