Introduction
Hello….welcome to Kookin With Kamesha. I am a native of Spring, TX who recently lost my dad after a long battle with cancer. Facing this huge loss, I overcame obstacles by using my love for cooking to make healing easy which resulted in meals that taste great. I will share what I cook daily! ENJOY
Etouffee
Ingredients
1-cup onions
1-cup bell peppers
1 garlic
4-5 green onion stalks chopped
Directions:
Dice all and put into butter until vegetables are soft
Add 2 cans of Campbell’s Cream Of Mushroom and ¾ cup of water
Add 2 pounds of shrimp after the cream of mushroom thins out.
Cook until shrimp is red and curls under.
When almost done add green onions for flavor
Cornbread Dressing
Ingredients
1 can cream of chicken
1 can cream of mushroom
½ can chicken broth-Swanson
1 ½ teaspoon sage
1 whole stalk celery
2 onions
2 bell peppers
1 clove garlic
4 boxes Jiffy Cornbread
Directions:
Cook cornbread according to package, then break up
Saute vegetables in butter until tender
Add all other ingredients
Bake at 350 degrees until brown 30-45 minutes
Chili
4 pounds chili meat (grind or cubed steak)
2 Jalapenos
1 garlic chopped
1 Anaheim pepper chopped
1 bell pepper chopped
1 yellow onion chopped
1 ½ tbsp chili powder
1 ⅔ tbsp Camino
2 tbsp honey
2 cans rotel chunky tomato
2 cans tomato sauce
1 bottle beer of your choice (add water as necessary for consistency)
1 yellow bell pepper chopped
1 red bell pepper
1 orange bell pepper
1 large tomato chopped
