After an adventurous teaching career of fifteen years, she decided to pursue her love of writing which stemmed from a childhood full of daydreams. Her writing endeavors began as a small child with her first poem titled “A Friend” (written on a “Hello Kitty” notepad), and continued on through high school writing articles and poems for the school newspaper, and on through the debut of her first novel.     IMPORTANT INFORMATION

    *Always preheat your oven unless otherwise directed.

    *Always check meat temperature with a cooking thermometer.

    *White meat chicken should be cooked to 170°

    *Dark meat chicken should be cooked to 185°

    *Always rinse raw chicken with cold water and pat dry before cooking.

    *I usually cook a whole chicken, let it cool, debone it, then put chicken pieces into freezer bags and freeze them for later use in casseroles. (Around 2 cups of chicken pieces per bag.)

    *Beef should be cooked to 150° to 170°

    *Pork should be cooked to 150°

    Veggies & Salads

    ASPARAGUS

    Whatcha Need:

    Asparagus

    Olive oil

    Salt & pepper

    Garlic powder

    Whatcha Do:

    Cut off bottoms of asparagus. Coat lightly in olive oil.

    Sprinkle with salt, pepper, and garlic powder (lightly).

    Cook on a baking sheet on non-stick foil at 400° for 10 minutes.

    BAKED POTATOES

    Whatcha need:

    Baking potatoes (Russet)

    Foil

    Toppings: Butter, Sour cream, Shredded cheese, Bacon bits

    Whatcha Do:

    Wash potatoes under cold water and scrub the dirt off.

    Poke holes all over with a fork.

    Wrap each potato in foil.

    Bake at 400° for an hour or until you can push a fork or knife in easily.

    POTATO FRIES

    Whatcha Need:

    Spray oil

    Potatoes of your choosing

    Olive oil

    Salt
