DINNER IN 30!

PUMPKIN & FETA PIZZA

MAKES 2 PREP & COOK 20 MINUTES

200g pumpkin
2 large pita breads or store- bought pizza bases
2/3 cup tomato pasta sauce (see tip)
2 tbsp olive oil
100g feta, crumbled
50g rocket leaves

1 Preheat oven to 220°C. Grease two oven trays or pizza pans.

2 Using a vegetable peeler, slice pumpkin into thin strips.

3 Place pita or bases on oven trays, spread with sauce, then top with pumpkin. Drizzle with olive oil and sprinkle with feta.

4 Bake for 10 minutes or until pumpkin is tender and bases are crisp. Top with rocket to serve.

TIP

For an easy spice kick, try arrabbiata sauce instead.

4 x 200g firm fish fillets
2 tbsp soy sauce
