EASY One-Pot MEALS
CREAMY CHICKEN CORDON BLEU PASTA
Serves 6-8
This cheesy pasta dish from Amanda Batcher at The Chunky Chef is sure to become a family favorite. It pairs the classic flavors of chicken cordon bleu with creamy pasta, making it impossible to resist.
INGREDIENTS
1 tablespoon unsalted butter
1 teaspoon extra-virgin olive oil
2 boneless, skinless chicken breasts, diced into ½” pieces
1 medium yellow onion, diced
1 cup ham, diced into ½” pieces
1 teaspoon garlic powder
1 teaspoon dried minced onion
½ teaspoon dried parsley
1 teaspoon Dijon mustard
½ teaspoon kosher salt
¼ teaspoon black pepper
3½ cups chicken stock
3 cups campanelle or other short cut pasta
3 tablespoons heavy cream
2 cups shredded Swiss or Gruyère cheese, divided
Minced fresh parsley (for garnish)
INSTRUCTIONS
Heat a Dutch oven or large heavy-bottomed pot over medium heat and add butter and oil. Add diced chicken and cook for 3 to 4 minutes, until golden brown. (The chicken may not be cooked all the way through, but that’s OK.) Remove chicken
