Souper!

Soups are the perfect meal for a cold day. This hearty chicken dish is made with whole milk and finished with spinach and parmesan tortellini. You can give it a stew-like texture by adding two tablespoons of flour instead of just one.

ROASTED CHICKEN FLORENTINE

2 tbsp olive oil
1 medium onion, diced
2 stalks celery, diced
1 carrot, diced
1 tbsp flour
2 garlic cloves, minced
½ tsp salt
½ tsp fresh thyme
¼ tsp black pepper
1 litre chicken stock
1 cup whole milk
2 cups fresh spinach, washed and trimmed
500g roasted chicken meat, cubed
500g spinach and parmesan tortellini
fresh parsley for garnish
