Salmon and Pea Salad
SERVES 4
INGREDIENTS
½ cup peas (frozen is fine)
4 salmon fillets (100g each)
2 cloves garlic, crushed
1 lemon, juiced
1 tblsp extra virgin olive oil
3 spring onions, chopped
2 cups baby spinach
1 cup cooked brown rice
½ cup chopped fresh dill
½ cup chopped fresh parsley
