STUFFED ZUCCHINI AND EGGPLANT
This recipecan be made as a vegetarian dish – just omit the mince and add extra vegetabies instead.

• 4 small zucchini
• 4 small eggplants
• 60ml olive oil
• 1 brown onion, finely diced
• 2 garlic cloves, crushed
• 1 small red chilli, thinly sliced
• 25g firmly packed mint leaves, finely chopped
• 25g firmly packed flat-leaf parsley leaves, finely chopped
• 250g lean beef mince
• 2 x400g tins crushed tomatoes
• 2 tbs tomato paste (concentrated purée) • 1 tbs dried oregano
• 135g long-grain rice
1 Preheat the oven to
