Spice it up
You’ll need 2 cups of shredded cooked chicken for this recipe. To spice it up, add 2 tblsps of hot curry powder.
MULLIGATAWNY SOUP
SERVES 4-6 PREP AND COOK: 45 MINS
1 large barbecued chicken
1 large onion, finely chopped
1 tblsp ginger paste
2 medium carrots, finely chopped
2 tblsps mild curry powder
1 cup dried red lentils (190g), rinsed and drained
1½ litres (6 cups) chicken stock
400g can chopped tomatoes
1 bunch English spinach (300g)
