The Aging Cookbook - Tina Porter
Foreword
Aging has a wonderful beauty, and we should have respect for that.
– Eartha Kitt
At some point in our life, most of us utter the question - When did I get so old?
It’s a fact of life that we are all going to age, but what most people fail to understand is that we are not helpless to the aging process.
I used to be one of those people who was ready to surrender to side effects
that come with aging. I was ready to throw in the towel and gracefully
give into the aches and pains, the increase in blood pressure, and the lack of mental clarity. After all, it was just part of life...wasn’t it?
So what changed? I went to lunch with a friend of mine. I watched as she ordered a range of items and created her own meal from ingredients off the menu. I joked with her that she was one of those
people that waiters rolled their eyes at. She laughed, but then she explained something to me that was so simple, I was shocked that I hadn’t heard about it before. She explained to me that she was eating what her body needed. At this point, I assumed she was referring to what people say to excuse their eating a huge chocolate bar – I must need the iron!
But, as it turned out, she was referring to something completely different.
That afternoon I learned about the importance of changing the nutrition that you provide to your body as you go through different phases of life. She explained it to me using the example of pregnant women. They eat what their bodies need in order to support the changes that are taking place within their bodies. The same principle, she said, went through the aging process. As we age, our bodies change and need different nutrients to support those changes.
It seems too simple to be true...right? Wrong.

What is Healthy Aging?
The term healthy aging
refers to the process of creating an optimal atmosphere for the aging body to thrive. This includes, but is not limited to, making dietary changes that provide maximum levels of nutrition (in the form of varied macronutrients, vitamins, and minerals) to support the unique needs of the aging body.
By providing the body with the unique nutrients it needs to compensate for changes caused by the aging process, we create a healthier and more smoothly running machine.
