    Walter's Rustic French Onion Soup with Crusty Bread

    Ingredients:

    4 large onions, thinly sliced

    4 tablespoons unsalted butter

    2 tablespoons olive oil

    2 cloves garlic, minced

    1 teaspoon thyme leaves

    1 bay leaf

    4 cups beef or vegetable broth

    1/2 cup red wine

    Salt and pepper to taste

    4 slices of crusty French bread

    1 cup Gruyère cheese, grated

    Instructions:

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook until they become caramelized and golden brown, stirring occasionally.

    Stir in the minced garlic, thyme leaves, and bay leaf. Cook for another minute.

    Pour in the red wine and let it simmer for a few minutes to reduce slightly.

    Add the beef or vegetable broth to the pot and bring to a boil. Reduce the heat and let it simmer for about 20 minutes.

    Season with salt and pepper to taste.

    Preheat the oven to broil.

    Ladle the soup into oven-safe bowls. Place a slice of crusty French bread on top of each bowl.

    Sprinkle the grated Gruyère cheese over the bread slices.

    Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly.

    Ingredients:

    8 slices of thick-cut bread

    8 slices of ham

    8 slices of Gruyère cheese

    2 tablespoons butter

    2 tablespoons all-purpose flour

    1 cup milk

    1/4 teaspoon nutmeg

    1/4 teaspoon black pepper

    1/4 teaspoon Dijon mustard

    1/4 cup grated Parmesan cheese

    Instructions:

    Preheat your oven to 375°F (190°C).

    In a small saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to make a roux.

    Slowly pour in the milk while whisking vigorously to avoid lumps. Keep whisking until the sauce thickens and becomes smooth.

    Stir in the nutmeg, black pepper, and Dijon mustard. Remove from heat and set aside.

    Take 4 slices of bread and place a slice of ham and a slice of Gruyère cheese on each. Top with another slice of bread to make 4 sandwiches.
