    Walter's Traditional Greek Spanakopita

    Ingredients:

    1 pound spinach, washed and chopped

    1 cup feta cheese, crumbled

    1 medium onion, finely chopped

    3 tablespoons olive oil

    2 eggs, lightly beaten

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    1/4 teaspoon nutmeg

    12 sheets of phyllo pastry

    1/2 cup melted butter

    Instructions:

    Preheat the oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

    Add the spinach to the skillet and cook until wilted. Remove from heat and let it cool.

    In a mixing bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten eggs, salt, pepper, and nutmeg. Mix well.

    Brush a baking dish with melted butter.

    Lay a sheet of phyllo pastry in the baking dish and brush it with melted butter. Repeat this process, layering 6 sheets of phyllo pastry, brushing each sheet with melted butter.

    Spread the spinach and feta mixture evenly over the layered phyllo sheets.

    Layer the remaining 6 sheets of phyllo pastry on top of the spinach mixture, brushing each sheet with melted butter.

    Using a sharp knife, score the top layer of phyllo pastry into small squares or triangles.

    Bake in the preheated oven for 40-45 minutes, or until the pastry turns golden brown.

    Remove from the oven and let it cool for a few minutes before serving.

    Walter's Greek Lemon Chicken Souvlaki Recipe

    Ingredients:

    1.5 lbs boneless, skinless chicken breast, cut into cubes

    1/4 cup extra virgin olive oil

    2 tablespoons fresh lemon juice

    2 cloves garlic, minced

    1 teaspoon dried oregano

    1/2 teaspoon dried thyme

    1/2 teaspoon dried rosemary

    Salt and pepper, to taste

    Wooden skewers, soaked in water for 30 minutes

    Lemon wedges, for serving

    Instructions:

    In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and pepper.

    Add the chicken cubes to the marinade and coat them well. Cover the bowl and refrigerate for at least 1 hour, or overnight for better flavor.

    Preheat the grill to medium-high heat.

    Thread the marinated chicken onto the soaked wooden skewers.

    Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred on
