BEANS and CHICKPEAS

PICKLED BEAN SALAD

“This is a super-easy side to enjoy with a winter roast.”

Preparation: 15 minutes

For the dressing, mix:

wholegrain mustard 1 T
red wine vinegar ¼ cup
Woolworths white balsamic condiment 3 T
lemon ½, zested and juiced
garlic 2 cloves, crushed
olive oil 3 T
Woolworths red speckled sugar beans 1 x 400 g can
Woolworths dried black-eyed beans 100 g, soaked and cooked
celery 3 sticks, chopped
red onion ½, thinly sliced dill a handful, chopped
white anchovies, for serving

Toss the beans, celery, onion, dill and anchovies together, then add the dressing and serve.
