Double the marinade and freeze it to defrost before your next braai. It's just as good used for fish, vegetables and the most delicious lamb chops.

COOK'S TIP

Craving a burger? This meatball recipe is great for making patties, too. Fry in a pan in olive oil, or cook in your air-fryer.

AIR-FRYER JERK CHICKEN WINGS

 Cooking: 20 minutes

For the marinade:

spring onions 2, roughly chopped
 garlic 2 cloves Scotch Bonnet chilli 1, seeded
 fresh thyme 3 sprigs
 honey 2 T
 ground allspice 1 T
 ground white pepper 1 t
 ground nutmeg 1 t
 ground cumin 1 T
 soya sauce ½ cup

For the green sauce:

fresh coriander 30 g
 garlic 2 cloves
 fresh mint 10 g, plus extra to garnish
 plain yoghurt ½ cup
 lime 1, zested and juiced
 sea salt and freshly ground black pepper, to taste free-range chicken wings 600 g
 extra virgin olive oil 1 T
 Woolworths Heat and Eat coconut jasmine rice 2 x 250 g sachets
 red kidney beans 1 x 400 g can, drained
 papaya 1, peeled and roughly chopped

1 To make the marinade, place all the ingredients in a blender, then blend until smooth. Coat the chicken wings in the marinade and the olive oil, then place into an air-fryer and cook for 15 minutes at 200°C. 2 To make the sauce, blend all the ingredients together until smooth, then set aside until needed. 3 Heat the rice according to package instructions and mix with the beans. 4 Serve the cooked chicken with the rice, green sauce and papaya chunks, garnished with mint.

FEAR OF FRYING?

Instead of deepfrying, spray the chicken with oil and roast in the oven for 35 minutes at 200°C.
