PAN-FRIED TOMATOAND-DHAL SOUP

“This is my go-to feelgood, comforting soup. Make a lot and freeze in individual portions. It’s a great way to use up lots of tomatoes.”

Serves 2 to 4 EASY GREAT VALUE Preparation: 10 minutes Cooking: 40 minutes

ghee 2 T
onion 1, roughly chopped
garlic 3 cloves, crushed
green chilli 1, crushed
ginger 1 t crushed
curry leaves 1 sprig
Woolworths hot curry spice 1 T
ripe tomatoes, 4, quartered
vegetable stock 2 cups
water 1 cup
red lentils 300 g
salt, to taste
