    Bruschettas with eggplant pulp

    Serves 4

    Ingredients:

    ♣  4 Slices of bread

    ♣  2 Eggplant

    ♣  Pepper to taste

    ♣  Salt to taste

    ♣  1 Tablespoon of vinegar

    Directions

    Rinse both eggplant and halve lengthwise.

    Grill on both sides for approximately 20-30 minutes.

    Scoop out cooked flesh and set aside.

    In a bowl combine the vinegar, salt and pepper.

    Grill bread slices until toasted; top the toasted bread slices with eggplant pulp.

    Pour in vinegar over the bruschettas and serve.

    Puff Pastry bites

    Make 10-12 Bytes:

    ♣  1 Package of puff pastry

    ♣  Flour

    ♣  4 oz of parmesan cheese grated

    ♣  30 g of Butter

    ♣  3 Eggs yeast

    ♣  ¼ Milk

    ♣  Salt and Pepper

    Directions

    Add butter to a cup of hot milk, stir until butter is melted.

    In a bowl, whisk 2 egg yolks with grated Parmesan cheese and pepper; Add the milk and the butter; Pour mixture in a saucepan and cook over a low heat. 

    Stir constantly, continue cooking until the mixture is firm, but do not allow it to come to boil.

    Unfold the sheet of puff pastry and roll out then cut into 10-12 largest circles; with the remaining pastry form 10-12 smaller circles to use as cover.

    Place the largest circles in ungreased muffin cups, press gently onto buttom and upsides, allowing corners to point up.

    Divide the eggs mixture among pastry cup and then cover the puffy bites with the smaller circles.

    Whisk remaining egg with half spoon of cold water and brush over pastry.

    Bake for about 20 minutes and serve warm.

    Canapés with Camembert

    Ingredients for 4 people:

    ♣  4 slices of black bread

    ♣  50 g of butter

    ♣  120 g of Camembert

    ♣  8 red radish

    ♣  Salt to taste

    ♣  Pepper to taste

    Directions

    Beat butter until light and fluffy and then spread on the black bread slices; Top with slices of Camembert.

    Wash red radishes; Drain and dry on paper.

    Cut the stems and leaves and slice each radish into very thin slices. Arrange the sliced radish over the top of the Camembert; Season the canapes with salt and pepper.

    Place on a platter some lettuce leaves and arrange the canapes.

    Garnish with radish.
