Southern fried chicken
Dipping the chicken in milk helps to make a thicker coating that is more robust than just dusting in flour. By finishing the chicken off in the oven it gets a nice crisp crust without absorbing too much oil.

8 skinless chicken thighs
8 skinless chicken drumsticks
200ml milk
200g self-raising flour
large pinch each of paprika, turmeric and cayenne pepper
6-8 tbsp groundnut oil
