    Introduction

    Although many food items are available year round, we still consider some of them to be seasonal, meaning they are present in greater quantity or they are at their peak quality in one season compared with another. Many cooks feel the best variety and quality come in the fall - harvest time.

    Some of the most common harvest foods are:

      Apples: So many varieties, so many uses. Rome, McIntosh, Golden and Red Delicious, Winesap - the list goes on. Apples are plentiful from coast to coast in the Autumn and so are the recipes which cover everything from appetizers to desserts.

      Pears: While they don’t get the billing that apples do, pears are a very versatile fruit in their own right. Pears are wonderful canning fruits and they make great desserts, too.

      Persimmons: Perhaps lesser known than some fall fruits, persimmons are a tricky lot. If they are not totally ripe, their taste is so bitter
