One-Bowl Baking

Cornmeal Sprinkle Cake

MAKES 1 (8½X4½-INCH) LOAF

Add some fun to the cold and dreary winter months with this colorful cake.

CAKE

1½ cups all-purpose flour
1 cup granulated sugar
¾ cup finely ground yellow cornmeal
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon kosher salt
½ cup vegetable oil
½ cup whole milk
3 large eggs
2 teaspoons vanilla extract
2 tablespoons rainbow sprinkles

GLAZE

1½ cups confectioners’ sugar
2 tablespoons plus 1 teaspoon whole milk
¼ teaspoon vanilla extract

Preheat oven to 350°. Spray an 8½x4½-inch loaf pan with baking
